My friend gave me a challenge to make something using canned corn and white beans. I was going to buy feta, but I found feta dressing that I could use. Either is fine. I also found whole wheat pasta, but you can use regular pasta if you like. Tri-color rotini would look really colorful.
2 (15 oz.) cans corn kernels
1 (15.5 oz.) can white beans (cannellini kidney)
8 oz. whole wheat pasta
1 red onion diced
Oregano vinaigrette (recipe below)
Feta
Grape or cherry tomatoes
Parsley
Salt and pepper
Oregano vinaigrette
1 T. (organic) oregano or minced dried fresh oregano
1 T. minced shallot
1/4 c. red wine vinegar
1/2 c. extra virgin olive oil
Salt and pepper to taste
Whisk together oregano, shallot, and red wine vinegar.
While whisking, slowly drizzle in extra virgin olive oil.
Add salt and pepper to taste.

Make pasta according to package instructions.
Cut tomatoes in half slicing threw where the stem was removed.
Drain liquid from feta.
In a large bowl, mix together corn, red onion, pasta, tomatoes, feta, oregano vinaigrette (may not need all of it), and parsley.
Gently mix in white beans so they do not break apart.
Add salt and pepper to taste.
